You know those days you wake up and you’re just like – yep, pancakes. Pancakes is all I need in my life today. It doesn’t happen often for me, but when it comes on, it comes on strong and the craving must be satisfied immediately. That’s where Blueberry Compote Pancakes come in. When I made these pancakes for the first time it was a euphoric experience. The light pancakes, layered with the tart blueberry compote and creamy Greek yogurt… it was a hit. I normally opt to make my pancakes from scratch, but you know, when those pancake cravings kick in I need pancakes fast. Lately I’ve been using the Birch Benders Paleo Pancake Mix, because not only does it taste amazing, it has great ingredients, no sugar added, and best of all it’s super quick to whip together. Ingredients:
- Pancake mix or your favourite homemade recipe
- 1 cup blueberries
- 2 tablespoons water
- 2 tablespoons pure maple syrup
- 1/2 teaspoon lime juice
- 1/2 cup plain Greek yogurt
- 1 teaspoon pure maple syrup (more if you like your yogurt sweeter)
- Garnish: more berries and maple syrup
Directions:
Blueberry compote: On a stove top mix together 1/2 cup blueberries with the water and pure maple syrup. Simmer on medium-low heat for 10 minutes until liquid starts to thicken into a syrup like consistency. After that, add an additional 1/2 cup of blueberries and simmer for an additional 5 minutes. Remove from heat and add a squeeze of lime juice, about 1/2 teaspoon.
Greek yogurt: Mix 1/2 cup of plain Greek yogurt with 1 teaspoon of pure maple syrup (more if you like it sweeter)
Assembly: Place your first pancake in a plate, evenly spread a small amount of the Greek yogurt mixture and the blueberry compote. Place the next pancake on top and repeat the same steps. Top off with your favourite berries and some maple syrup. Enjoy!
