Chia seed pudding is a quick and easy way to get in a nutritious breakfast with minimal effort. Chia seeds are rich in fiber, omega-3 fatty acids, antioxidants and a great source of plant based protein. I like incorporating chia seeds into my diet as much as possible to help maintain good digestion. Topping off this parfait with your favourite fruits will add even more fibre and healthy nutrients to start your day.
Ingredients
- 2 tablespoons of chia seeds
- 1/2 cup almond milk (any milk will work)
- 2 teaspoons of pure maple syrup or honey
- 1/4 teaspoon vanilla extract
Directions
- Combine all ingredients into a small bowl or mason jar
- Taste for sweetness and adjust accordingly with maple syrup or honey
- Refrigerate overnight or for at least 8 hours
- Top with your favourite fresh fruits
