I had two sweet potatoes sitting in my fridge that I had been neglecting, so it was time to get creative before they went bad. My go-to is sweet potato fries, but I wanted to think a little outside the box this time around. One of my favourite breakfast meals is a potato hash. So instead of the regular white potatoes, I decided I would give the sweet potatoes a go. I even got a little crazy and decided to add some spices and maple syrup, as I was aiming for a sweet/savoury combination. It turned out better than I was expecting and actually one of my favourite dishes I have made, ever! The orange is ever so subtle and the maple syrup gives a nice caramel flavour and crunch to the potatoes. Give this recipe a try when you’re feeling bored of the regular bacon and eggs. It’s a good one.
Ingredients
- 2 medium sweet potatoes
- 3 tablespoons cooking oil
- 3 tablespoons pure maple syrup
- 1/2 teaspoon cinnamon
- 2 teaspoons of juice from an orange
- 2-3 eggs
- 1 avocado
- handful of arugula
- salt & pepper to taste
Directions
- Peel the sweet potatoes and chop into small cubes.
- Meanwhile, preheat the frying pan over medium heat on a stove top. Once the pan is hot, add the cooking oil.
- Add the sweet potato cubes to the frying pan and cook until soft (note: covering with a lid or tin foil will help speed up the cooking process)
- Add the maple syrup, cinnamon, orange juice, salt, and pepper. Mix throughly.
- Make a few clear circles in the pan by pushing the sweet potatoes to the side. Add your eggs into the circles.
- Cover with lid or tin foil until eggs are cooked to desired level. As the eggs cook the maple syrup will start to caramelize and create a sticky sauce.
- Top with additional maple syrup, cinnamon, avocado, arugula, and fresh orange slices.
