If you like the idea of a Starbucks’ Pumpkin Spice Latte in food form, this Pumpkin Spice Latte Overnight Oats recipe is it. Not only do these oats taste just like creamy pumpkin spice heaven, they are healthy! This recipe is vegan and uses all natural ingredients, including the sweetening agent. The coconut milk in this recipe adds such a creamy consistency, which mimics the rich and creaminess of the Starbuck’s Pumpkin Spice Latte. Overnight oats are a great option for meal prepping, they take little effort, are so versatile, and requires only a few simple steps. This overnight oats recipe is for all the fall/pumpkin spice lovers out there. Enjoy!
Ingredients:
Base:
- 1 cup oats
- 1 can of unsweetened coconut milk (one like this)
- 1/3 cup pumpkin puree (not pumpkin pie filling!)
- 1/4 cup pure maple syrup
- 1 tablespoon chia seeds
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 teaspoon pumpkin spice*
- pinch sea salt
Toppings:
- Plain or vanilla togurt (non dairy for vegan recipe)
- Pumpkin puree
- Dash of pumpkin spice
*If you can’t find pumpkin spice in stores it is super easy to make your own. I ended up making my own for this recipe, thanks to my local Bulk Barn for the recipe as follows:
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cloves
- 1/8 teaspoon ground nutmeg
Directions
- Mix all ingredients in a large bowl until well combined
- Pour into favourite serving size jars
- Chill in the fridge overnight, or for at least a few hours if making during the day
- Decorate with your favourite toppings and enjoy 🙂
