These Chocolate Chip Banana Protein Muffins are the perfect snack to have ready to go after a workout, or when you’re on the go and need to grab something quick. Often after a workout or when I come home from work it is easy to start snacking on the quickest (and usually not so healthy) things. I started making these muffins to have readily available for when I’m on the go. Since I am always trying to maximize my daily protein intake, these muffins are packed with protein. In order to meet my current fitness goals I am trying to eat a lot of protein and these muffins are a great way to help me reach my protein goal. Making up the protein content of these muffins includes eggs, almond butter, protein powder and plain greek yogurt. See the recipe below for how to whip up this quick and healthy recipe!
This recipe yields roughly 12 standard size muffins.
Ingredients:
- 2 ripe bananas
- 2 eggs
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup pure maple syrup
- 1/3 cup plain greek yogurt
- 1/3 cup almond milk
- 1 tsp vanilla extract
- 3/4 cup flour*
- 1/2 cup vanilla vegan protein powder*
- 1/4 tsp cinnamon
- 1 tsp baking soda
- 1/2 cup dark chocolate chips

Directions:
- Preheat oven to 350°F
- Grease your muffin tin with butter or I like to use an avocado spray bottle to give the pan a light misting, ensure to coat all sides and bottoms of each cup in the muffin tin
- In a large bowl mash the ripe bananas until there are no large lumps
- Add in the remaining of the wet ingredients – your eggs, almond butter, maple syrup, greek yogurt, almond milk and vanilla, mix until combined well
- In a separate bowl, mix together your dry ingredients – flour, protein powder, cinnamon and baking soda
- Mix in your dry ingredients into the wet mixture, about a third of the dry mixture at a time, mix until just combined evenly
- Gently fold in your chocolate chips until evenly combined throughout batter
- Spoon the batter into your greased muffin tin
- Bake in the preheated oven for 17-19 minutes and let sit for at least 10 minutes until trying to remove from the tin otherwise they might stick and break apart
