Greek yogurt is a great healthy snack, high in protein and vitamins. It’s even better when frozen into a popsicle with your favourite fruit, chocolate or peanut butter mixture. This was my first go at making homemade popsicles and it turned out so well! It’s an easy way to make a simple snack more fun for kids (and adults!!). You can get creative with your add-ins, using different combinations and adjusting the sweetness to your desired taste. I like to cook down my fruit on the stove with a tiny bit of water to create a syrup like consistency, which bleeds nicely into the popsicles. You can forgo this step if you are short on time and just want chunks of fruit. This is such a quick and easy recipe that anyone can make. Let me know your favourite combinations!!
Ingredients:
- Popsicle mould (mine is President’s Choice)
- 3 cups Greek yogurt
- 1/3 cup honey (adjust to your own sweetness level)
- 1 tsp vanilla extract
- 2/3 cup your favourite fruit
Directions:
- In a pan over medium heat, cook your fruit of choice (I used frozen fruit – tropical and blueberry) until soften and the juices have been released. You can also add 1-2 teaspoons of water in to make more of a syrup-y consistency. Set aside until cooled down.
- In a large mixing bowl, combine your Greek yogurt, honey and vanilla.
- To assemble your popsicles start layering your fruit and yogurt alternatively. (I started with fruit and did four layers in total ending with yogurt).
- Insert your popsicle sticks*
- Place in the freezer overnight or for at least 6 hours to really solidify.
*Notes:
Next time I will try using regular wooden popsicle sticks as I found the plastic sticks my mould came with were a little short and weren’t super secure
