Everyone can’t get enough of pumpkin spice as soon as Fall rolls around and I’m here to continue spreading that love. This recipe was inspired by a pumpkin spice latte from Starbucks, but in loaf form. The cake is dense and moist as I only wanted to use natural sugars in this recipe. The natural sugar comes from 100% pure maple syrup and adds a nice flavour to the loaf, while avoiding highly processed sugars at the same time. I personally used gluten free flour (Bob’s Red Mill All Purpose GF Baking Flour), which I love, however you can use any flour you’d like. Because this recipe uses liquid sugar, you can expect the consistency of the batter to be quite wet. This helps make for a very moist texture once cooked.
The highlight of this recipe is the Pumpkin Spice Cream Cheese Frosting, which is packed with pumpkin spice seasoning, and once again – 100% pure maple syrup for natural sweetening.

Ingredients
- 2 large eggs
- 1/4 cup coconut (liquid) or canola oil
- 1 cup pure maple syrup
- 1 teaspoon vanilla extract
- 2 cups flour (I used Bob’s Red Mill All Purpose GF Flour)
- 1 tablespoon pumpkin spice
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 15 oz pumpkin puree (1/2 can of E.D. Smith Pumpkin puree)
Pumpkin Spice Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/4 cup maple syrup
- 2 tablespoons pumpkin spice
- pumpkin seeds for topping
- pumpkin spice for topping
Directions
- Preheat oven to 375°F.
- Spray a 9×5 inch loaf tin with oil, and line with parchment paper.
- Beat the eggs with a mixer on low, add coconut oil, maple syrup, and vanilla.
- In a separate mixing bowl combine dry ingredients and add to wet ingredients. Mix on low until everything combines. Add pumpkin puree.
- Pour the batter into the lined loaf tin, bake for 60-65 minutes. Let completely cool before adding frosting or cutting. The loaf needs to settle or else it will be too soft to cut.
- In the meantime, combine all Pumpkin Spice Cream Cheese Frosting ingredients in a bowl and blend with a mixture until well combined.
- Add the frosting to your loaf, top with more pumpkin spice and pumpkin seeds.
