This recipe for healthy peanut butter cookies is only four ingredients and takes only about 20 minutes to prep and bake. It’s a really quick recipe to whip up when you’re craving something sweet, but still healthy. I used oat flour instead of a wheat flour for the added nutrition. If you don’t have any oat flour on hand you can simply at the equivalent measurement of raw oats to a food processor or blender and blend on high until the oats form a fine texture. Although the oat flour is a great replacement for wheat flour, it does tend to make for a more crumbly texture. That being said, it is crucial that you let your cookies cool completely to ensure they set properly. If you find the texture is too dry for your liking you can add another tablespoon of melted coconut oil to restore the moisture. Part of making this recipe “healthy” was by ensuring that I used a natural form of sugar. This healthy peanut butter cookie recipe uses natural sugar (pure maple syrup) for it’s sweetness. They are not too sweet, but just enough to satisfy that sugar craving. After my cookies cooled completely I decided to kick it up a notch and dip them n dark chocolate, with a sprinkle of sea salt. This step is completely optional. This recipe makes only six cookies, but can be easily doubled or tripled.
Ingredients
Cookie dough:
- 1 cup oat flour (gluten-free optional)
- 1/2 cup natural peanut butter
- 1/4 cup maple syrup
- 1 tablespoon coconut oil, melted
Chocolate topping (optional):
- 1/4 cup dark chocolate
- 1/2 tablespoon coconut oil
- pinch of sea salt
Directions
- Set oven to 350°F
- Add all ingredients to a food processor or a high speed blender, blend until smooth and all ingredients are incorporated well
- Form into 1.5-2 inch round balls and place on a cookie sheet
- With the bottom-side of a fork, press lightly into the cookie and then again the opposite way to make a grid shape and flatten the cookie
- Bake in the oven for 12 minutes
- Remove and let set until completely cool
- While the cookies are cooling, add the chocolate and coconut oil to a microwave safe dish and cook until the chocolate has melted. Cook on 30 second intervals, stirring in between, to ensure the chocolate hasn’t overcooked
- Dip one side of the cookies into the melted chocolate and place back on the baking sheet to set again
- Once the chocolate has almost set you can sprinkle with a tiny bit of sea salt – if you do it when the chocolate hasn’t fully set the sea salt will just sink into the chocolate and won’t be visible
