It’s no surprise here that I love any recipe with peanut butter. So here is just another way to incorporate more peanut butter into your life – Peanut Soba Noodles. This recipe is really similar to my Thai Peanut Zucchini Noodles, with a few exceptions, and it’s made with soba noodles instead of zucchini noodles. I love soba noodles. The texture is a little bit sticky and chewier than regular wheat pasta and I love it. Soba noodles are also a great replacement for when you want an gluten-free pasta alternative. There are a few different types of soba noodles, but the ones I like to use are “buckwheat” or “spelt and buckwheat”. Despite “wheat” being in the name, this type of noodle is actually 100% wheat and gluten free. Buckwheat is actually the seed of a flowering fruit. It is high in nutrients and filled with fiber (source). Most packages I have seen separate the noodles into three serving sizes. If your package doesn’t do this, just use about a third of the contents, or as much as you desire, really. I am really not a fan of serving sizes when making recipes because everyone’s serving sizes vary and some days you just feeling like eating three servings instead of one.
Ingredients:
- Buckwheat (I used spelt & buckwheat) soba noodles – about 8.8 ounces, some soba noodle packages separate the box into 3, 8 ounce servings – like this one
Peanut Sauce:
- 1/4 cup natural peanut butter
- 2 tablespoons soy sauce – I like to use the low sodium version or tamari if you want to make this entire recipe gluten free
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1/2 tablespoon ginger, minced
- 1/2 tablespoon pure maple syrup or honey
- 1/2 teaspoon of your favourite hot sauce – my favourite is this Korean hot sauce
- pinch of sea salt
Toppings:
- 1/4 cup broccoli, chopped in tiny pieces
- 1/4 cup red pepper, finely sliced

- Cilantro, for garnish
Directions:
- Cook the soba noodles according to package instructions
- Make your sauce – mix together all ingredients until smooth with no lumps
- Chop your veggies – I like to keep my veggies raw but you can sauté yours in some sesame oil for some extra flavour if that floats your boat
- Drain the water from your noodles and add back in the pot
- Add the peanut sauce to your pot and mix until the sauce is covering all noodles evenly. Start with about half of the sauce and add more as you need for your desired sauciness level.
- Top off with some homemade (ideal) pickled cabbage and cilantro
